I get a lot of request from my friends on how to make Kouign Amann, this delicious sugary buttery salty pastry from Brittany.
So last week end with the help of the team of McCormick & Schmicks catering I set up a quick demonstration.
Here is the recipe we used:
1200gr flour
100gr sugar
10gr instant dry yeast
30gr salt
120gr melted butter
700gr water
800gr folding butter
